**For a lower sugar and fat version, follow same ingredients but change maple syrup and coconut oil amounts to 1/2 cup instead of 3/4 and increase mango nectar by 1/4 cup. Those changes will give you a muffin with approx 196 calories, 21 grams carbohydrate(less than a medium apple), 12 grams healthy fats, 4 grams protein according to My fitness Pal calorie calculator.**

At Market Organics we primarily use Spelt flour in our baking. It is easier to digest than wheat and a lot of people with wheat allergies(excluding gluten allergies as spelt contains gluten) can usually enjoy spelt without a problem. This is a bigger batch of muffins but it keeps well in the fridge for a week, so you can enjoy warm yummy muffins all week long.
